Select the wild loaches with length of 4-5 cun and of the size of fingers. Pour oil into pot, stir fry the chopped green onions and shredded gingers until there is aroma. Put in the clean loaches, and stir fry in high heat for a moment. Add in some water, sauce, dried chilies, Chinese chives (or sour bamboo shoots) and then stir them. Cover the pot and cook them in high heat. They can be out of pan as long as there is fragrance. The surfaces of fried loaches are dry, delicious and chewy while the inside of them remaining tender.
