Fried River Snail

Fried River Snail is a local special snack popular in food stalls in the streets of Nanning. First, put the river snails in the clear water for several days for them to excrete the sludge and dirts. Later, quickly fry the snails with high heat, add a pinch of salt, oil, ginger and wine, then add appropriate amount of water and simmer. Before turning off the heat, add the enough oil, salt, green onion or garlic. Do never forget to add a pinch of purple perilla or piper sarmentosum for seasoning.
