Wuming Lemon Duck, also known as Gaofeng Lemon Duck, is named after its origin near Jiepai of Gaofeng Forest Farm in Wuming District, Nanning. It first appeared in the early 1980s when there was a small place called Jiepai in Wuming District, Nanning, which was adjacent to the highway. With the constant flow of vehicles and people, a plain small shop quietly took root by the roadside. The shop owner used locally free-range and plump ducks, joining homemade and perfectly pickled sour lemons, sour chili peppers, sour Chinese bulbous onions, sour ginger, and other ingredients, to meticulously cook a delicious dish, i.e. Lemon Duck. The unique sour and spicy flavors instantly conquered the stomachs of passing diners. Through word of mouth, the small shop gained widespread fame, and Lemon Duck officially made its debut in Guangxi’s culinary world. In September 2018, Lemon Duck was rated as one of Guangxi's top ten classic dishes in "Chinese Cuisine". In December 2018, the production technique of Wuming Lemon Duck was listed in the seventh batch of autonomous-region-level intangible cultural heritage. In January 2020, the Production Technique Inheritance Base of Wuming Lemon Duck was established, and a plaque was awarded to Gan Baohui, the representative inheritor of this intangible cultural heritage project. Lemon Duck carries the profound cultural heritage of Guangxi’s cuisine, moving from the humble origins of street food to the grand halls of fine dining.
