Huaishan is the root of brown-budded Chinese yam belonging to the yam family. It tastes sweet, creamy and tender, and contains many types of nourishment such as protein, starch, sugar, and 17 amino acids and 26 trace elements. Being a healthy food, it can be made into many different dishes. It has also some medical benefits: nourishing such human organs as spleen, stomach, lung, and kidney, producing saliva, keeping energy, and improving the immune system if regularly eaten. Dried Huaishan slice, powdered Huaishan, Huaishan drink, Huaishan jam and Huaishan wine are foods and beverages popular among consumers. Places in which it is mainly produced are Nalou Town and Liuxu Town of Yongning County, where a growing area of 800 hectares ensures an annual output of 14 million kilograms. Its marketing season is from January to April.
